Cheddar biscuits

Makes 18-24 biscuits

INGREDIENTS:


• 7 cups all-purpose flour
• 2 tsp. kosher Salt
• 3 tbsp. baking powder
• 2 tsp. baking soda
• 4 tsp. sugar
• 10 oz. (2 ½ Sticks) European butter
• 3 cups buttermilk
• 8 oz. shredded cheddar cheese


PROCEDURE:


1. Sift and mix together all dry ingredients. Using a cutter or a fork, cut butter into the dry ingredients. There should be small, pea-sized chunks of butter throughout the flour mixture. Add shredded cheddar cheese.

2. Make a well in the center of the flour mixture and pour buttermilk into it. Fold flour into buttermilk just until a solid mass starts to form. Do not overmix.

3. Place dough onto a well-floured table. Dust top of dough with more flour and roll out dough mass to ½-inch thick. Using a round cookie cutter, cut biscuits and place them as close together as you can on a well-buttered sheet pan.

4. Bake biscuits at 400 degrees for 10-15 minutes or until biscuits have risen and are evenly browned (oven dependability varies).

5. Remove from oven and brush with melted butter.


HINTS:


Keep butter cold and solid until ready to use. Softened butter will puree into flour and biscuits will not rise.
